Two brothers, Jorge and Ramon Aguilar, who previously oversaw the R and J Athens Café are the brains behind the new Blissful Bites & Brunch breakfast and brunch space which has been operating in Rothschild since July. As the result of owner Ramon’s vision and Jorge’s management, the space blends Mexican dishes with conventional breakfast classics and is here due to a larger population.
“We planned to come here a year ago,” Jorge Aguilar says. “There are a little bit more people here and we have gotten some pretty good comments. People are truly happy with the place.”
Reviews on Facebook extoll the cozy atmosphere, reasonable prices, and affable service while menu highlights so far include the huevos rancheros, omelets, and the presentation of the child’s Fruity Pebbles pancakes.
That food is served in a spacious, high-ceiling dining area with wood beam supports that lends an almost lumberjack-like theme to the Mexican-themed brunch spot. In typical brunch spot fashion, mimosas are definitely on the menu as well as coffee several raved about online.
Why Blissful Bites and Brunch stands out
Jorge adds their touch for common recipes which makes them stand out is the love they put into every plate in contrast to the impersonal nature of corporate chains.
“We try to do our best for everyone,” he says. “We are human and humans make mistakes. I think we are working as we go and down the line will identify what we can change and adjust.”
Other parts of any evolution will be played by ear as well. Ultimately, while the COVID-19 pandemic impacted the industry which Blissful Bites & Brunch and the Aguilars have found their home in, the size of where they are now has left them in good shape and hopeful for their future.
“Small communities and smaller businesses I would say really struggled with the pandemic,” Jorge Aguilar says. “There was a big difference between the smaller restaurant and coming here I think. We sell everything on the menu pretty much, people try out a little bit of all things here.”
